Hanloh! About the menu: I recommend pairing khao yum with lemongrass wings or spring rolls to complete a full meal. Khao yum is our new dish, best known in the Southern part of Thailand. "Nam budu" is basically unfiltered fermented fish sauce--but please do not be frightened! I have to modify the recipe by using shrimp paste and fish sauce combination which are considerably much less funky. Afterward, the dressing is simmered down even more with a generous amount of herbs ( makrut leaves, galangal, etc.), tamarind concentrate, and palm sugar. In short, the "funk" is almost fully eliminated at this point. If you are still worried, ask for the vegan dressing :)
