Chef Chris Pester of Sante Adairius is allowing me to go into his kitchen earlier than usual this Monday just to cook this dish. One thing about Khao Mun Gai you should know is that it has to be prepared and served the day of. It cannot be reheated. The dish is served barely warmed, almost room temp. The chicken cooks low and slow in aromatic broth. We serve chicken over rice. We sautéed the rice in chicken fat and aromatics then use chicken broth instead of water to cook the rice. You will get a bowl of chicken broth, and two options of sauce, one will be spicy and one is sweet. Thais love addition of chicken livers. Fogline chicken livers have such a clean flavor!
“Tom Kha” is often misunderstood as a soup. I grow up eating Tom Kha like a curry, it serves with jasmine rice. We selected local oyster mushrooms for this one!
