BACK OF HOUSE MEAT TRIMMINGS STEW $10
I worked in a Thai restaurant in Berkeley right when I landed in the United States when I was 13 years old. I started as a dishwasher, then I would help with filling water and make Thai iced tea. When I could speak a little more English, I started to buss tables and take food orders. The restaurant had six pages menu for customers. We (workers) were not allowed to eat anything on the menu unless there was a misfired. Oftentimes the Thai and Laotian cooks saved meat trimmings and turned them into a wonderful new dish. This is one of them. We pressure cooked sinewy part of the meat then seasoned it with hot vinegar and aromatics. I put some bitter greens in this stew too. This will be served with rice.
